These DELISH litlle cake bites are a very popular Aussie cake called Lamingtons (sponge cake coated in chocolate and grated coconut). Sarah from Style Me Gorgeous shared her yummy recipie with us:
2 x 450g packets of prepared madeira cake (or pound cake) 4 cups icing sugar mixture (confectioner's sugar) 1/2 cup milk 20g butter, melted few drops blue (or any colour you like) food colouring 3 cups shredded coconut
1) cut cake into 4cm squares. 2) Sift icing sugar into large heatproof bowl, gradually add milk and butter, mix until smooth 3) Tint with food colouring 4) Using a fork, dip squares of cake in icing, drain off excess and roll in coconut. 5) Place on a wire rack to set
