I had some SUPER ripe bananas again... Here's the recipe on how to make Banana Cake Cupcakes! They were moist and sweet~ just the way we like em'.
1/2 cup melted butter 1 1/2 cup sugar 2 eggs 1 teaspoon vanilla extract 1 ripe banana cut into pieces 1/4 buttermilk 2 cups all-purpose flour 1 teaspoon baking powder 3/4 teaspoon baking soda 1/2 teaspoon salt
In a large mixing bowl (or the lovely KitchenAide;) cream the butter and sugar. Then add the eggs, vanilla extract, buttermilk, and bananas. In a separate bowl combine the flour, baking powder, baking soda, and salt. Gradually add to the banana mixture. Mix until smooth. Line the cupcake pan and fill each one about 2/3. Bake at 350 degrees F for 18-20 min, or until a toothpick comes out clean.
Cream Cheese Frosting~ 8 oz of cream cheese (room temp) 1 stick of butter (room temp) 1 cup of confectioners' sugar 1 teaspoon of clear vanilla extract
In a mixing bowl (or lovely KitchenAide;) cream the butter and cream cheese. Gradually add the confectioners' sugar. Add the vanilla. Beat until smooth. * I doubled the frosting ingredients and I still have some left over for more;o)
Add sprinkles for fun!
